Torisuki

Torisuki is basically a chicken variation of sukiyaki. (In the Tokyo region, it is called torinabe.) The chicken is fried in its own fat and then simmered in a broth consisting of soy sauce, sugar (or miso), sake and stock. After that vegetables and tofu are added.

Torisuki is fixed right at the table. People help themselves to the materials that are in a shallow frying pan. As materials are taken from the pan the cook will add more materials, sometimes even varying teh seasoning somewhat.
